I had this Japanese cheesecake recipe pending since I saw it some time ago in one of my favorite blogs. I have not been lucky enough to visit Japan and I am not sure if this cake is Japanese, but it is delicious.

We bake for about 40 minutes. Halfway through cooking, a dark layer will form on the surface which will puff up quite a bit, this is normal. When the cake is firm to the touch, turn off the oven and leave the cake 10 minutes more in its hot interior. Remove and let it cool completely before unmolding.
